Victoria Sandwich

Ingredient List

Biscuits

  • 175g self raising flour
  • 175g caster sugar
  • 175g margarine
  • pinch of salt
  • 3 eggs beaten

Filling

  • Jam

Icing topping

  • 100g icing sugar
  • 1 tbsp warm water
  • food colouring
  • Cherries

Directions

Step 1

Preheat oven to 180oC, Place circular greaseproof paper into two 17.5cm round sandwich tins

Step 2

Cream together the sugar and margarine until light and fluffy, using a wooden spoon. Beat in the eggs a little at a time. Mix well after each addition.

Step 3

Sift the flour and salt into the creamed mixture. Carefully, mix together until all the flour has been incorporated. Check the mixture for a soft dropping consistency. Add a table spoon of cold water if necessary.

Step 4

Pour into the two prepared tins (equally). Bake for 20 minutes or until well risen and golden.

Step 5

Turn out onto a wire rack and leave to cool. Spread the jam evenly over the base of one cake and place the other on top.

Step 6

To prepare the icing, sift the icing sugar into a small mixing bowl and gradually mix in the water until a smooth paste is formed which coats the back of the spoon. Quickly beat out any lumps. Spread over the cake before the icing is set, and decorate around the edge with walnuts or cherries.
